NEW POTATOES
(Fresh potatoes salad with cheese)

 

Brush the potatoes and boil them with the peal on.

 

Let them cool of some and divide them into big slices, but the salad get even tastier if the salad is served with potatoes slightly warm.

 

Stir rape oil, vinegar, salt and pepper in a big bowl.

 

Gently mix in potatoes, onion, and cheese into the bowl. Taste and add more salt and pepper if needed.

Add dill just before serving, that way dill will still look and taste fresh.

 

4 portions

12 boiled mid sized new potatoes

1 red onion, fine chopped

1 spoon white wine vinegar

5cl rape oil

100g grated matured cheddar (*)

1 pot of dill, fine chopped

Salt and crushed black pepper corns

This salad can be enjoyed with most meat on the barbecue and is excellent with crayfishes and crabs.

(*) Original recipe states that Swedish strong cheese called Västerbotten should be used, but that’s kind of hard to get hold of in U.K., try IKEA otherwise a seriously matured cheddar is a very good substitute.
